- 4 medium leeks
- ½ medium celeriac
- 4 oz green beans
- 4 oz mangetout
- 1 cup frozen peas
- 1 cup frozen broad beans
- 1 small bunch fresh sage
- 1 small bunch fresh basil
- 2 tbsp plain flour
- 2¾ cups cider
- 2¾ cups chicken stock (preferably organic)
- 1 lemon
- 3 tbsp butter
- olive oil
- sea salt
- black pepper
